Lukewarm Soba Noodle Salad

Traditional Japanese soba noodle salad - perfect for lunch, dinner or picnic.

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Soba Noodles Soba Noodles 150g 1 & 1/4 cups
  • Cucumber Cucumber 1/2 1/2
  • Spring Onion Spring Onion 2 2
  • Nori Seaweed Nori Seaweed 3 sheets 3 sheets
  • Ginger Root Ginger Root 1 cm 1 cm
  • Tahini Tahini 50g 3 tbsp
  • Soy Sauce Soy Sauce 5 tbsp 5 tbsp
  • Rice Vinegar Rice Vinegar 2 tbsp 2 tbsp
  • Granulated Sugar Granulated Sugar 1/2 tbsp 1/2 tbsp
  • Water Water 20ml 1 & 1/3 tbsps

Instructions

  1. 1.Cook the soba noodles as per instruction on the package.
  2. 2.Meanwhile wash the cucumber and cut into long and small dices (1.5cm x 0.5cm). Cut the green part of the spring onions into thin rings.
  3. 3.Peel and finely grate the ginger. Slice the seaweed into thin strips.
  4. 4.In a bowl add tahina, soy sauce, sugar, vinegar, water and ginger and mix well until smooth.
  5. 5.Add the cucumber dices as well as the onion rings and mix again until some water of the cucumber drains out into the sauce.
  6. 6.Then add the noodles and mix until the noodles are covered with the creamy sauce.
  7. 7.Top the noodles with the seaweed stripes before serving.
