A homely, warming potato and carrot soup flavored with fresh parsley, chives and goats cheese.

Ingredients

  • White Potatoes White Potatoes 5 5
  • Carrot Carrot 3 3
  • Green Beans Green Beans 300g 2 & 1/2 cups
  • Frozen Peas Frozen Peas 450g 3 cups
  • Spring Onion Spring Onion 3 3
  • Vegetable Stock Vegetable Stock 2 tbsp 2 tbsp
  • Goats Cheese Goats Cheese 150g 1 cup
  • Dried Chives Dried Chives 1 tbsp 1 tbsp
  • Fresh Parsley Fresh Parsley handful 1/3 cup
  • Olive Oil Olive Oil 1/2 tbsp 1/2 tbsp
  • Table Salt Table Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch

Instructions

  1. 1.Peel and dice potatoes into small cubes, and peel and cut carrots into small pieces.
  2. 2.Heat oil in a saucepan over medium-high heat and sear the potato cubes and the carrots in the pan.
  3. 3.Cut green beans and spring onions into small pieces.
  4. 4.Add the vegetable stock to the water and heat it, then boil the vegetables in water until soft.
  5. 5.Add goats cheese and stir.
  6. 6.Cut chives into fine rings, chop parsley, add to soup and season to taste.
