Roasted Bell Peppers with Capers

Oven roasted sweet bell peppers, well seasoned and served with capers and fresh parsley. Simple yet delicious!

- Yellow Bell Pepper Yellow Bell Pepper 3 3
- Capers Capers 4 tsp 4 tsp
- Fresh Parsley Fresh Parsley 1 handful 1 handful
- Table Salt Table Salt to taste to taste
- Ground Black Pepper Ground Black Pepper 2 pinches 2 pinches
- Extra Virgin Olive Oil Extra Virgin Olive Oil 5 tbsp 5 tbsp
Instructions
- 1.Wash the peppers, dry them well and cook them on a baking tray in the oven for about 30 minutes at 200°C.
- 2.Once they're roasted from one side, turn them around so they cook evenly all around.
- 3.Once cooked, they will retain moisture and have a jelly like consistency. Let them cool off.
- 4.Once they're cooled, peel them by hand (the skin will come off right away), discard all of the seeds, then tear them into strips.
- 5.Season with a little salt, pepper and olive oil. Garnish with capers and some finely chopped parsley and serve cold.
