Strawberry and Walnut Couscous

Creamy couscous topped with fresh strawberries, walnuts and yogurt.

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Strawberries Strawberries 1 1
  • Walnuts Walnuts 20g 2 tbsp
  • Couscous Couscous 90g 1/2 cup
  • Greek Yoghurt Greek Yoghurt 2 tbsp 2 tbsp
  • Clear Honey Clear Honey 1 tsp 1 tsp
  • Ground Cinnamon Ground Cinnamon 1 tsp 1 tsp
  • Almond Milk Almond Milk 180ml 3/4 cup

Instructions

  1. 1.Pour the couscous into a bowl. Boil water in a kettle, and once boiled pour into the bowl, enough water so the couscous is submerged. Let stand for 10 mins.
  2. 2.After 5 mins, place a saucepan on the hob and pour in the milk, bring to a boil.
  3. 3.When the couscous has cooked (should appear dry and fluffy) pour the couscous into the saucepan of milk. Take the saucepan off the heat, add some cinnamon and honey and mix well. Cover the saucepan and let stand for another 10 mins.
  4. 4.Once the 10 mins is up, serve and top with yoghurt, sliced strawberry and crushed walnuts. Add more milk, cinnamon or a drizzle of honey, depending upon your taste.
