Green Pesto Vegetable Pasta

Penne pasta dish in a green pesto dressing with broccoli, zucchini (courgette) and asparagus.

- Penne Pasta Penne Pasta 180g 1 & 1/4 cups
- Broccoli Broccoli 8 florets 8 florets
- Zucchini Courgette 30g 1/4 cup
- Fine Asparagus Fine Asparagus 2 sticks 1/4 cup
- Garlic Garlic 1/2 a clove 1/2 a clove
- Parmesan Cheese Parmesan Cheese 10g 2 tsp
- Lemon Lemon 1/2 1/2
- Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp

Instructions
- 1.Boil a large pot of salted water on the hob, once boiled add the penne pasta and reduce the heat. Cook as per the package instructions, approx. 10-12 mins.
- 2.Boil another smaller pot of water on the hob, and cook the broccoli for 4 mins.
- 3.Add a tbsp of olive oil to a frying pan and warm. Chop the courgette (zucchini) and asparagus and add to the pan, also add the drained broccoli, cook for 4 mins on a gentle heat.
- 4.Crush the garlic and add to the pan. Grate the parmesan and set to one side.
- 5.Take the pasta off the heat and drain. Pour the pasta back in to the empty cooking pot. Take the broccoli out of the frying pan and crush with the side of a knife and chop finely, add to the pot.
- 6.Add the green pesto to the pot and the remaining ingredients from the pan. Season generously and add a tbsp. of olive oil, mix the contents.
- 7.Serve with the grated parmesan and a quartered lemon.
