- Chickpeas in Water Chickpeas in Water 400g 2 cups
- Long Grain Rice Long Grain Rice 180g 1 cup
- Fresh Spinach Fresh Spinach 90g 3 cups
- Tomato Pasta Sauce Tomato Pasta Sauce 100g 2/5 cup
- Yellow Onion Brown Onion 1 1
- Garlic Garlic 1 clove 1 clove
- Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tbsp 1 tbsp
- Sea Salt Sea Salt to taste to taste
- Ground Black Pepper Ground Black Pepper to taste to taste
- Black Sesame Seeds Black Sesame Seeds 1 tsp 1 tsp
- Mixed Italian Herbs Mixed Italian Herbs 1 tsp 1 tsp
- Vegetable Stock Vegetable Stock 1/2 a cube 1/2 a cube
- Water Water 250ml 1 cup
Instructions
- 1.Drain and rinse the chickpeas.
- 2.Sauté the chopped onion and garlic with olive oil for 2-3 mins.
- 3.Then add boiling water, vegetable stock and the long grain rice, cook for around 5-7 minutes on a medium heat.
- 4.Add the chickpeas, the tomato sauce, spices, sea salt and pepper and cook it for a further 5-7 minutes until the rice is tender and the water is fully absorbed.
