- Asparagus Asparagus 250g 2 cups
- Fresh Spinach Fresh Spinach 300g 7 cups
- Shallot Shallot 1 1
- Green Peas Green Peas 80g 1/2 cup
- Garlic Garlic 2 2
- Lime Lime 1 1
- Table Salt Table Salt seasoning seasoning
- Ground Black Pepper Ground Black Pepper seasoning seasoning
- Water Water 500ml 2 cups
- Vegan Margarine Vegan Margarine 2 tbsp 2 tbsp
- Olive Oil Olive Oil 2 tsp 2 tsp
- Set Honey Set Honey 2 tsp 2 tsp
Instructions
- 1.Wash the asparagus, cut off the wooden ends and cut into long pieces.
- 2.Heat the margarine in a pot until it starts to foam. Toss asparagus tips and peas in the hot butter and braise for a few minutes. Put them aside.
- 3.Peel and dice the shallot and the garlic.
- 4.Heat oil in a pot and braise shallots, garlic, the remaining asparagus and the spinach for about 10 minutes.
- 5.Add water and bring to a boil. Reduce the heat and puree the vegetables with a hand blender.
- 6.Squeeze out the lime juice and add to the soup. Add honey and mix. Season to taste with salt and pepper.
- 7.Serve in bowls and garnish with the asparagus tips and the peas.
