- Chickpeas in Water Chickpeas in Water 200g 1 cup
- Dried Cranberries Dried Cranberries 2 tbsp 2 tbsp
- Baby Spinach Baby Spinach 30g 1 cup
- Feta Cheese Feta Cheese 40g 1/4 cup
- Flax Seeds Flax Seeds 2 tbsp 2 tbsp
- Granadilla Granadilla 2 2
- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Balsamic Vinegar Balsamic Vinegar 2 tbsp 2 tbsp
- Ground Black Pepper Ground Black Pepper pinch pinch
- Sea Salt Sea Salt pinch pinch
Instructions
- 1.Drain and rinse chickpeas.
- 2.Whisk together granadilla pulp, olive oil, balsamic vinegar, ground black pepper and sea salt. Pour the dressing into a glass jar with a lid.
- 3.Add remaining ingredients in layers, starting with the chickpeas, baby spinach, feta and cranberries. Garnish with flax seeds (optional).
- 4.Shake jar and enjoy immediately, or refrigerate for up to three days.
