Vegan Courgette Meatballs

Homemade vegan meatballs, packed with a tasty zucchini (courgette) almonds and turmeric filling. Delicious!

Ingredients

  • Zucchini Courgette 6 6
  • Almonds Almonds 150g 1 cup
  • Cornstarch Cornflour 150g 1 & 1/4 cups
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 1 tbsp 1 tbsp
  • Sea Salt Sea Salt seasoning seasoning
  • Ground Black Pepper Ground Black Pepper seasoning seasoning
  • Ground Turmeric Ground Turmeric 1 tsp 1 tsp

Instructions

  1. 1.Grate the courgette (zucchini) and put them in a bowl with a little salt in order to let them lose the excess of water.
  2. 2.Blend the almonds and add a couple of tablespoons of courgette, whisk until you get a dense compound.
  3. 3.Work the mixture in a bowl adding the remaining courgette.
  4. 4.Add the cornflour (cornstarch), turmeric, salt, and pepper.
  5. 5.Forms the meatballs with the hands, coat them in in rice flour.
  6. 6.Cook them quickly in a non-stick frying pan with some extra virgin olive oil or in oven at 180° for 20 minutes.
