This rich and creamy avocado dip is spiced with cayenne pepper and thai curry paste with a hint of cilantro (coriander) and ginger.

- Coconut Milk Coconut Milk 100ml 2/5 cup
- Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 Tbsp
- Lime Lime 1/2 1/2
- Pink Salt Pink Salt 1/2 tsp 1/2 tsp
- Garlic Garlic 1 clove 1 clove
- Ginger Root Ginger Root 2cm coin 2cm
- Ground Black Pepper Ground Black Pepper 1/4 tsp 1/4 tsp
- Green Thai Curry Paste Green Thai Curry Paste 1 tsp 1 tsp
- Ground Cayenne Pepper Ground Cayenne Pepper 1/8 tsp 1/8 tsp
- Fresh Cilantro Fresh Coriander handful handful
- Black Sesame Seeds Black Sesame Seeds 2 tsp 2 tsp
- Nachos Nachos 200g 1 cup
Instructions
- 1.Chop the tomato and onion (leave a little to one side for the topping) and pour into a blender.
- 2.Carve out the avocado flesh and also add to blender.
- 3.Add all the liquids, spices and seasonings and then blend until smooth.
- 4.Pour into a bowl, add your toppings of tomato, onion, coriander (cilantro) and sesame seeds then refrigerate for at least 3 hours.
- 5.Serve with nachos or chips.
