  • Dressing:

  • Fresh Oregano Fresh Oregano 1 tbsp 1 tbsp
  • Table Salt Table Salt 1/2 tsp 1/2 tsp
  • Ground Black Pepper Ground Black Pepper 1/2 tsp 1/2 tsp
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 3 tbsp 3 tbsp
  • Salad:
  • Red Potatoes Red Potatoes 900g 5
  • Green Olives Green Olives 140g 1 cup
  • Cherry Tomatoes Cherry Tomatoes 250g 1 & 2/3 cups
  • Feta Cheese Feta Cheese 200g 1 & 2/3 cups
  • Corn Kernels in Water Sweetcorn in Water 180g 1 cup
  • Celery Celery 2 2
  • Cashew Nuts Cashew Nuts 2 tbsp 2 tbsp
  • Pumpkin Seeds Pumpkin Seeds 2 tbsp 2 tbsp
  • Sesame Seeds Sesame Seeds 2 tbsp 2 tbsp

Instructions

  1. 1.In a small bowl, whisk together lemon juice, chopped oregano, salt, and pepper.
  2. 2.Gradually pour in olive oil, whisking until dressing is combined.
  3. 3.Boil potatoes for 10-15min, peel, cut into bite sized pieces and place in a large serving bowl.
  4. 4.Add remaining ingredients, add dressing and toss gently to combine and serve.
