Spelt Couscous and Artichoke Salad

Spelt is one of the oldest cultivated grain crops, with a higher content in fiber, protein and vitamin than wheat. Combined with fresh artichoke, tomatoes, celery and cashew nuts, this a gorgeous and filling dish for your meal plan!

Ingredients

  • Organic Spelt Couscous Organic Spelt Couscous 150g 1 cup
  • Artichoke Artichoke 100g 3/4 cup
  • Corn Kernels in Water Sweetcorn in Water 60g 1/3 cup
  • Cashew Nuts Cashew Nuts 10g 1 tbsp
  • Large Vine Tomatoes Large Vine Tomatoes 1 1
  • Salted Capers Salted Capers 1 tbsp 1 tbsp
  • Celery Celery 1 stalk 1 stalk
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 3 tbsp 3 tbsp
  • Ginger Root Ginger Root 2cm 2cm

Instructions

  1. 1.Put the couscous in a large pan and toast it briefly on high heat stirring continuously (or shaking the pan every now and then).
  2. 2.In meantime warm the water (double the volume of the couscous) with a pinch of salt, add it carefully into the pan with couscous, lower the heat and mix carefully using a wooden spoon until the water is completely absorbed. Then cover the pan with a lid and let sit aside to cool down.
  3. 3.On a cutting board chop the tomato into small cubes, slice the artichokes (if they're not already sliced), the celery and the cashew nuts and toss them in a large bowl together with the sweetcorn and the rinsed capers. Season with 2 tbsp of olive oil and let their flavors melt.
  4. 4.Now, back to the pan, separate the couscous grains helping yourself with a wooden spoon and 1 tbsp of olive oil so that it won't stick ungraciously. Then toss the couscous into the bowl and carefully mix with the other ingredients.
  5. 5.Finally, grate and squeeze 2 cm of ginger root in order to get its precious 1 Tsp juice and sprinkle it into the salad. Mix well and serve to fully enjoy it at lunch or dinner.
  6. 6.A light recipe, delicious and easy to make!
