- Tofu Tofu 450g 1 & 4/5 cups
- Coconut Oil Coconut Oil 1 tbsp 1 tbsp
- Satay Marinade:
- Yellow Onion Brown Onion 1 1
- Garlic Garlic 3 cloves 3 cloves
- Ginger Root Ginger Root 3cm piece 3cm piece
- Lemon Juice Lemon Juice 2 tbsp 2 tbsp
- Soy Sauce Soy Sauce 2 tbsp 2 tbsp
- Apple Cider Vinegar Apple Cider Vinegar 3 tbsp 3 tbsp
- Peanut Sauce:
- Coconut Milk Light Coconut Milk Light 375ml 1 & 1/2 cups
- Red Curry Paste Red Curry Paste 2 tsp 2 tsp
- Smooth Peanut Butter Smooth Peanut Butter 125g 1/2 cup
- Brown Sugar Brown Sugar 2 tbsp 2 tbsp
- Soy Sauce Soy Sauce 2 tbsp 2 tbsp
- Lemon Juice Lemon Juice 1 tbsp 1 tbsp
- Table Salt Table Salt pinch pinch
- Ginger Root Ginger Root 2cm piece 2cm piece
Instructions
- 1.Marinade:
- 2.Puree all ingredients in a food processor.
- 3.Cube tofu and marinade it.
- 4.Leave covered for at least 2 hours in the fridge.
- 5.Peanut sauce:
- 6.Whisk together coconut milk and red curry paste, garlic and onion in saucepan.
- 7.Whisk in peanut butter until smooth.
- 8.Stir in sugar and lemon juice and bring to a simmer.
- 9.Meanwhile cook the rice as per packet instructions.
- 10.Reduce heat to low, and cook 5 minutes, or until thickened, stirring often.
- 11.Take off stove.
- 12.Sauté the tofu on all sides until golden brown in a pan using the oil.
- 13.Serve with white rice and peanut sauce.
