Apple and Cinnamon Spelt Muffins

Infused with apple, cinnamon and vanilla, this is a gorgeous and easy to prepare spelt muffin recipe for two!

- Ground Cinnamon Ground Cinnamon 1 tsp 1 tsp
- Table Salt Table Salt pinch pinch
- Organic Eggs Organic Eggs 1 1
- Almond Milk Almond Milk 2 tbsp 2 tbsp
- Apple Sauce Apple Sauce 2 tbsp 2 tbsp
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Vanilla Extract Vanilla Extract 1/2 tsp 1/2 tsp

- Brown Sugar Brown Sugar 2 tsp 2 tsp

Instructions
- 1.Preheat oven to 180°C, and grease or line two ramekins.
- 2.Combine dry ingredients in a large mixing bowl. Grate apple and stir into dry ingredients to combine.
- 3.Add wet ingredients, including egg and basil, to a medium mixing bowl and whisk until combined.
- 4.Pour wet ingredients into dry ingredient bowl, stirring gently until just combined.
- 5.Divide batter between two ramekins, sprinkle with leftover brown sugar and cinnamon mix, and bake for 30min or until golden brown/an inserted toothpick comes out clean.
- 6.Allow to cool for 5 to 10min and enjoy!
