A sweet and crunchy lettuce salad with healthy beet (beetroot), kidney beans and orange.

- Lettuce Lettuce 1 head 1 head
- Kidney Beans in Water Kidney Beans in Water 90g 1/2 cup
- Red Onion Red Onion 1 1
- Raw Yellow Beet Raw Yellow Beetroot 1/2 1/2
- Orange Orange 1 1
- Dill Dill 1 bunch 1 bunch
- Black Sesame Seeds Black Sesame Seeds 1 tsp 1 tsp
- Dill Oil Dill Oil 1 tbsp 1 tbsp
Instructions
- 1.Bring a saucepan of water to a boil and add the kidney beans, cook on a low heat for approx 7 minutes.
- 2.Peel and cut the onion and raw beetroot into very thin slices.
- 3.Wash and chop the lettuce.
- 4.Peel the orange, and discard the pith. Cut orange into slices.
- 5.Drain the kidney beans and mix everything together with a little dill oil.
- 6.Garnish with fresh dill and sesame seeds.
