Spicy Sauteed Carrots

Many years ago I found out that carrots and a stir-fry pan make an exquisite combo. Try it and you will soon discover that, all those who have never held carrots with much affection (like me), will soon change their mind. An easy and tasty appetizer!

- Carrot Carrot 6 6
- Red Garlic Red Garlic 1 clove 1 clove
- Hot Chili Powder Hot Chilli Powder 2 tsp 2 tsp
- Sea Salt Sea Salt pinch pinch
- Ground Black Pepper Ground Black Pepper seasoning seasoning
- Extra Virgin Olive Oil Extra Virgin Olive Oil 5 tbsp 5 tbsp
Instructions
- 1.Pour the extra virgin olive oil in a frying pan, chop the garlic clove in half and let it saute.
- 2.Then wash, dry and finely slice the carrots (the thinner the better) and toss them into the pan, cook for 20 to 30 minutes, stirring and checking from time to time in case half a glass of water is needed.
- 3.When they're almost ready (check with a fork - see if you prefer them a bit more toasted) add the salt, pepper, and hot chilli.
- 4.Set aside for a few minutes then serve warm. They'll make a colorful, healthy and tasty side dish.
