- Yellow Onion Brown Onion 1 1
- Ginger Root Ginger Root 1 tsp 1 tsp
- Garlic Garlic 2 cloves 2 cloves
- Mustard Seeds Mustard Seeds 1 tsp 1 tsp
- Garam Masala Garam Masala 1 tsp 1 tsp
- Ground Cumin Ground Cumin 1/2 tsp 1/2 tsp
- Ground Turmeric Ground Turmeric 1/2 tsp 1/2 tsp
- Ground Cayenne Pepper Ground Cayenne Pepper 1/4 tsp 1/4 tsp
- Red Lentils Red Lentils 200g 1 cup
- Vegetable Stock Vegetable Stock 375ml 1 & 1/2 cup
- Diced Tomatoes Chopped Tomatoes 400g 2 cups
- Table Salt Table Salt pinch pinch
Instructions
- 1.Combine chopped onion, grated ginger, minced garlic and 1 tbsp water in a blender and blend until smooth.
- 2.Add olive oil and mustard seeds to a skillet over medium heat and cook until seeds start to pop.
- 3.Add onion mixture and cook, stirring, for 8 to 10min until water has cooked out.
- 4.Add garam masala, cumin, turmeric and cayenne and cook for 3min until fragrant.
- 5.Add lentils and stir to coat.
- 6.Add vegetable stock and tomatoes, bring to boil, and reduce to simmer.
- 7.Cook for 20-30min or until lentils are cooked.
- 8.Remove from heat, using an immersion blender, pulse several times until desired consistency.
- 9.Add salt and pepper to taste, garnish with coriander leaves (cilantro) and serve with rice or flatbread.
