Roasted Courgette and Carrot Salad

Combining zucchini (courgette), carrot and fresh parsley, this vibrant salad is also gluten free and low carb!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Carrot Carrot 10 10
  • Yellow Zucchini Yellow Courgette 2 2
  • Zucchini Courgette 2 2
  • Fresh Parsley Fresh Parsley bunch bunch
  • Sunflower Oil Sunflower Oil 3 tbsp 3 tbsp
  • Table Salt Table Salt to taste to taste

Instructions

  1. 1.Wash the carrots and courgettes (zucchini), slice into batons.
  2. 2.Pre-heat the oven to 200C.
  3. 3.Line two baking trays, add the carrot to one and courgette to the other. Drizzle both with olive oil and salt. Cook the carrots for 20 minutes and the courgette for 12 minutes. They should both roast at the edges slightly.
  4. 4.Once cooked, set aside to cool.
  5. 5.Wash and chop the parsley. Mix the parsley with the carrot and courgette in a large mixing bowl and serve.
