Absolutely sensational cookies with a nutty sesame flavor and a hint of coconut!

- Vegan Butter Vegan Butter 60g 4 tbsp
- Coconut Butter Coconut Butter 60g 4 tbsp
- Powdered Sugar Icing Sugar 60g 1/2 cup
- All Purpose Flour Plain Flour 140g 1 & 1/6 cups
- Black Sesame Seeds Black Sesame Seeds 50g 1/3 cup
- Vanilla Extract Vanilla Extract 1 tsp 1 tsp
Instructions
- 1.Melt the coconut butter on the stove.
- 2.Grind the black sesame into a sesame powder with a food processor and combine with sifted flour in a medium bowl, set aside.
- 3.Mix the melted coconut butter, vegan butter and sugar in a large mixing bowl until well mixed.
- 4.Add the flour mixture and vanilla extract and mix thoroughly.
- 5.Roll the dough into a ball and divide into 2.
- 6.Roll out each dough with large sheet of cling film covered, until it is around 0.5cm thick.
- 7.Keep the cling film on and place it in the fridge for 30-60mins to get the sheet firmer, which will make it easier to shape by cookie cutter later.
- 8.Preheat an oven to 170C degrees.
- 9.Remove the dough from plastic wrap and get creative with a cookie cutter.
- 10.Sprinkle sesame seeds over the cookie as decoration.
- 11.Bake for 15 minutes until the cookie turns slightly golden, but keep your eye on it... You may need to turn your tray around to ensure the cookies bake evenly.
- 12.Cookies can be a bit soft while hot, cool for 10-15 minutes before serving.
