- Mushrooms:
- Shiitake Mushrooms Shiitake Mushrooms 150g 1 & 1/2 cups
- Garlic Garlic 1 clove 1 clove
- Olive Oil Olive Oil 1 tsp 1 tsp
- Teriyaki Sauce Teriyaki Sauce 1/2 tsp 1/2 tsp
- Light Soy Sauce Light Soy Sauce 1/2 tsp 1/2 tsp
- Rice:
- Microwave Brown Rice Microwave Brown Rice 300g 1 & 2/3 cups
- Green Beans Green Beans 200g 1 & 3/5 cups
- Beansprouts Beansprouts 150g 1 & 1/2 cups
- Carrot Carrot 1 1
- Sauce:
- Sesame Oil Sesame Oil 1/2 tsp 1/2 tsp
- Mirin Mirin 1 tbsp 1 tbsp
- Teriyaki Sauce Teriyaki Sauce 1 tbsp 1 tbsp
- Sesame Seeds Sesame Seeds 1 tbsp 1 tbsp
- Light Soy Sauce Light Soy Sauce 2 tbsp 2 tbsp
- Garlic Powder Garlic Powder 1/2 tsp 1/2 tsp
- Spring Onion Spring Onion 1/2 1/2
- Water Water 1 tbsp 1 tbsp
- Fresh Cilantro Fresh Coriander Handful handful
Instructions
- 1.Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour.
- 2.Add the sliced shiitake mushrooms and stir fry for 2-3 minutes.
- 3.Pour in the soy and teriyaki sauce, simmer for a few minutes, or until slightly thickened, then place in a small bowl and set aside.
- 4.Heat the rice in the microwave.
- 5.Combine all sauce ingredients in a small bowl and mix well.
- 6.Place 150g rice in the middle of your serving bowl then place green beans, bean sprouts and carrot around it.
- 7.Place the teriyaki shiitake mushrooms in the middle.
- 8.Sprinkle the coriander on top and serve with the sauce.
