Broccoli and Orange Leaf Salad

- Organic Spinach Organic Spinach 90g 3 cups
- Lettuce Lettuce 200g 2 & 2/3 cups
- Yellow Split Peas Yellow Split Peas 110g 1/2 cup
- Carrot Carrot 1 1
- Orange Orange 1 1
- Broccoli Broccoli 1/2 head 1/2 head
- Sunflower Oil Sunflower Oil 1 tbsp 1 tbsp
- Table Salt Table Salt a pinch a pinch
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Sesame Seeds Sesame Seeds 4 tsp 4 tsp
- Sunflower Seeds Sunflower Seeds 4 tbsp 4 tbsp
Instructions
- 1.*Pre-soak the split peas the night before.*
- 2.Add the split peas to a saucepan with water, bring to a boil, then reduce the heat and cook for approx. 20 minutes until they become soft.
- 3.Cut the florets from the broccoli and add to an oven tray. Season with the salt and oil, then cook in the oven (180°C) for 15 minutes. Once cooked, remove from the oven and set aside to cool down.
- 4.Wash and roughly chop the spinach and lettuce. Peel and grate the carrot. Peel and cut the orange.
- 5.In a large bowl, mix the broccoli, split peas, spinach, lettuce, carrot and orange gently with your hands. Then serve with a dash of olive oil, sesame seeds and sunflower seeds.
