Mango Curry Tofu Sandwich

Ingredients

  • Tofu Tofu 75g 1/4 cup
  • Fresh Spinach Fresh Spinach 25g 1/2 cup
  • Mango Mango 1/2 1/2
  • Large Vine Tomatoes Large Vine Tomatoes 1/2 1/2
  • Yellow Onion Brown Onion 1/5 1/5
  • Cashew Nuts Cashew Nuts 10g 1 tbsp
  • Wholewheat Bread Wholemeal Bread 2 slices 2 slices
  • Dijon Mustard Dijon Mustard 1 tsp 1 tsp
  • Sour Cream Sour Cream 1 tbsp 1 tbsp
  • Curry Powder Curry Powder 1/2 tsp 1/2 tsp
  • Red Chili Flakes Crushed Chillies 1/2 tsp 1/2 tsp

  • Table Salt Table Salt seasoning seasoning
  • Granulated Sugar Granulated Sugar 1/2 tsp 1/2 tsp
  • Olive Oil Olive Oil 2 tbsp 2 tbsp

Instructions

  1. 1.Slice open the mango and carve out the flesh. Add to a blender and blend.
  2. 2.Pour the pureed mango into a small bowl and add the spice mix: curry powder, crushed chilli flakes, white pepper, salt, sugar, mustard and sour cream. Mix and set to one side.
  3. 3.Fine chop the onion and fry on the hob with some olive oil for 4 mins along with some crushed cashews. Once cooked set to one side.
  4. 4.Slice the tofu lengthways, and now cook the tofu in the frying pan, season and turn regularly. Cook for 3 mins both sides or until tofu lightly goldens.
  5. 5.Lightly toast the bread in a toaster. Wash the spinach, chop a large tomato and start building the sandwich. Apply the curried mango sauce to the top slice and enjoy!
