- Tofu Tofu 75g 1/4 cup
- Fresh Spinach Fresh Spinach 25g 1/2 cup
- Mango Mango 1/2 1/2

Instructions
- 1.Slice open the mango and carve out the flesh. Add to a blender and blend.
- 2.Pour the pureed mango into a small bowl and add the spice mix: curry powder, crushed chilli flakes, white pepper, salt, sugar, mustard and sour cream. Mix and set to one side.
- 3.Fine chop the onion and fry on the hob with some olive oil for 4 mins along with some crushed cashews. Once cooked set to one side.
- 4.Slice the tofu lengthways, and now cook the tofu in the frying pan, season and turn regularly. Cook for 3 mins both sides or until tofu lightly goldens.
- 5.Lightly toast the bread in a toaster. Wash the spinach, chop a large tomato and start building the sandwich. Apply the curried mango sauce to the top slice and enjoy!
