Caramelized Banana and Oatmeal Pancakes

Light, fluffy and gluten free pancakes with cinnamon and caramelized bananas. Delicious!

- Pancakes:
- Soy Milk Soya Milk 375ml 1 & 1/2 cup
- Rolled Oats Rolled Porridge Oats 180g 2 cups
- Baking Powder Baking Powder 2 tsp 2 tsp
- Sesame Oil Sesame Oil 1 tbsp 1 tbsp
- Vanilla Extract Vanilla Extract 2 tsp 2 tsp
- Maple Syrup Maple Syrup 2 tbsp 2 tbsp
- Table Salt Table Salt pinch pinch
- Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
- Caramelized Banana:
- Granulated Sugar Granulated Sugar 2 tbsp 2 tbsp
- Banana Banana 2 2
- Soy Milk Soya Milk 2 tbsp 2 tbsp
- Ground Cinnamon Ground Cinnamon pinch pinch
- Coconut Oil Coconut Oil 1 tbsp 1 tbsp
Instructions
- 1.Place all the ingredients except banana into a blender.
- 2.Blend until smooth, add little bit of milk for better consistency (if required).
- 3.Heat lightly greased pan over medium heat.
- 4.Pour batter on the pan (1/4 cup for each pancake).
- 5.As you see bubbles appearing on the surface, flip the pancake to the other side and let it cook for 1 minute.
- 6.Repeat the same for remaining batter.
- 7.Slice bananas length-wise.
- 8.Heat coconut oil in a pan over medium heat and put banana into it. Cook them for one minute.
- 9.Add sugar & cook until the sauce begins to caramalize.
- 10.Turn off the heat, add vanilla extract and serve with pancakes.
