- Spinach Cauliflower Noodles Spinach Cauliflower Noodles 500g 3 & 1/3 cups
- Avocado Avocado 1 1
- Fresh Cilantro Fresh Coriander 15g 1/4 cup
- Garlic Garlic 1 clove 1 clove
- Olive Oil Olive Oil 60ml 1/4 cup
- Lemon Juice Lemon Juice 2 tbsp 2 tbsp
- Ground Black Pepper Ground Black Pepper pinch pinch
- Sea Salt Sea Salt pinch pinch
- Sun Dried Tomatoes Sun Dried Tomatoes 25g 1/2 cup
- Red Chili Flakes Crushed Chillies 1/2 tsp 1/2 tsp
Instructions
- 1.Cook pasta according to packet instructions. The spinach cauliflower pasta pictured is available at Woolworths (South Africa), but any pasta will work with this recipe.
- 2.Place avocado, coriander leaves (cilantro), garlic, olive oil, lemon juice, salt and pepper in a blender and blend until creamy.
- 3.Heat olive oil in a frying pan over medium heat.
- 4.Roughly chop sun dried tomatoes, add to pan with chilli and cook, stirring, for 2 minutes.
- 5.Drain pasta, add avocado mixture and combine.
- 6.Serve pasta topped with sun dried tomato and chilli mixture.
