Simple Sesame Noodles in Soup

- Water Water 800ml 3 cups
- Vermicelli Noodles Vermicelli Noodles 360g 2 cups
- Beansprouts Beansprouts 200g 2 cups
- Enoki Mushrooms Enoki Mushrooms 100g 1 & 2/3 cups
- Spring Onion Spring Onion 1 1
- Peanuts Peanuts 30g 1/4 cup
- Sesame Oil Sesame Oil 1 tsp 1 tsp
- Table Salt Table Salt 1/2 tsp 1/2 tsp
- Light Soy Sauce Light Soy Sauce 1 tsp 1 tsp
- Bouillon Vegetable Stock Bouillon Vegetable Stock 1 tsp 1 tsp
- Fresh Cilantro Fresh Coriander Handful handful
Instructions
- 1.Trim and wash the enoki mushrooms, shred them by hand, then place in a pot with 800ml hot water.
- 2.Add the bean sprouts, ¾ spring onion shredded, ½ teaspoon sesame oil, salt, light soy sauce and bouillon into the pot, stir gently and cook for 5 minutes.
- 3.Divide the 360g of cooked vermicelli noodles between two bowls.
- 4.Pour over ½ the hot soup and pour on the remaining sesame oil splitting it equally between the two bowls.
- 5.Garnish with the remining spring onion, coriander (cilantro) and crushed peanuts. Delicious when warm.
- 6.This is just a basic simple noodle soup, experiment with different flavours by adding extra ingredients such as tofu, peas, roast vegetables...etc. Be playful!
