Bell Pepper and Tomato Linguine

A simple yet delicious pasta dish full of Mediterranean flavors served with a rich and creamy tomato sauce.

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Red Bell Pepper Red Bell Pepper 1 1
  • Tomato Puree Tomato Puree 3 tbsp 3 tbsp
  • Extra Virgin Olive Oil Extra Virgin Olive Oil 4 tbsp 4 tbsp
  • Garlic Garlic 1 clove 1 clove
  • Shallot Shallot 1 1
  • Table Salt Table Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Vegan Parmesan Vegan Parmesan 1 tbsp 1 tbsp
  • Linguine Pasta Linguine Pasta 150g 3/5 cup

Instructions

  1. 1.Place garlic and 2 tbsp olive oil in a saucepan over medium heat.
  2. 2.Deseed and dice bell pepper, add to saucepan and cook for 3min.
  3. 3.Add 1/4 cup water and increase heat to high for 5min until the bell pepper softens.
  4. 4.Transfer to a food processor and blend until smooth, set aside.
  5. 5.In another pot cook finely sliced shallots with 2 tbsp olive oil, add tomatoe puree and cook for 20min on medium heat.
  6. 6.Meanwhile cook pasta according to packet instructions.
  7. 7.Gently combine pasta and sauce and season with salt and pepper to taste. Top with vegan parmesan cheese (optional).
