Goji and Linseed Energy Bites

Combine superfoods goji berries and linseed with sweet dates for these seriously tasty energy bites that are packed with natural oxidants and nutrients. They're vegan and gluten free too!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Goji Berries Goji Berries 45g 1/2 cup
  • Pitted Dates Pitted Dates 90g 1/2 cup
  • Flax Seeds Flax Seeds 2 tbsp 2 tbsp
  • Maple Syrup Maple Syrup 1 tsp 1 tsp

Instructions

  1. 1.Place goji berries and dates in a blender and pulse until it forms a large mass. If too powdery, add maple syrup (otherwise optional) and blitz again until combined, remove and add to a big mixing bowl.
  2. 2.Add linseeds and mix together by hand.
  3. 3.Flatted mixture with a rolling pin, cover with wax paper and refrigerate for at least an hour.
  4. 4.Cut into squares or into shapes with a cookie cutter.
