We're all for zero waste kitchens! So if you are fond of the juice extractor just like me here you have an outstanding recipe to make some fruity and healthy cookies with the pulp leftovers! Dairy free and quick to prepare, these delicious cookies are the perfect healthy snack for in between meals.

* Switch between cup/oz and g/ml in Account Settings*
- (Juice Extractor Fruit Pulp) (Juice Extractor Fruit Pulp) 200g 4/5 cup
- Spelt Flour Spelt Flour 200g 1 & 2/3 cup
- Malt Syrup Malt Syrup 60g 4 tbsp
- Soy Milk Soya Milk 100ml 2/5 cup
- Corn Oil Corn Oil 2 tbsp 2 tbsp
- Baking Soda Bicarbonate of Soda 1 tsp 1 tsp
- Apple Cider Vinegar Apple Cider Vinegar 1 tsp 1 tsp
- Sunflower Seeds Sunflower Seeds 2 tbsp 2 tbsp
Instructions
- 1.First, mix all the dried ingredients and then add the liquid ones (vinegar at last) until you have a smooth homogeneous dough. If it’s still too dry, add a little milk.
- 2.Use a spoon (or your hands) to form 10 little balls on a parchment lined baking sheet and press them lightly on top to make 10 cookies.
- 3.Bake in a warm oven at 180° C for about twenty minutes.
- 4.Check the baking so the cookies won’t get too dry, then remove from oven, let them cool a bit and enjoy your eco-friendly breakfast!
