We can't get enough of these vegan and gluten free almond pastry treats! They're crispy, light and a real joy to make! Try yourself and add them to your personal weekly meal planner!

- Puff Pastry Puff Pastry 1 sheet 1 sheet
- Vegan Butter Vegan Butter 2 tsp 2 tsp
- Powdered Sugar Icing Sugar 25g 1/5 cup
- Maple Syrup Maple Syrup 1 tsp 1 tsp
- Almond Flakes Almond Flakes 80g 1 cup
Instructions
- 1.Preheat the oven to 170?C.
- 2.Mix the melted vegan butter, sugar and maple syrup in a small bowl.
- 3.Spread out your puff pastry sheet gently and brush on the butter and sugar.
- 4.Sprinkle the almond flakes evenly over the sheet and place cling film on top, pressing it down or rolling it gently onto the pastry.
- 5.Remove the cling film, cut the pastry into 2 x 5 cm strips, you should be able to make around 15 strips.
- 6.Place the strips onto a lined baking tray leaving at least a 5cm space between each one.
- 7.Bake for 10 minutes until they are puffy and golden on top.
- 8.Cool for 10 minutes before serving.
- 9.If you would prefer sweeter fingers you can brush another layer of melted butter and sprinkle on a couple teaspoons of sugar before you serve.
