Sweet Homemade Courgette Bread

This sweet zucchini (courgette) bread will blow your mind! The recipe results in a rich, soft and fluffy loaf that goes great with your favorite spread or afternoon coffee.

- Unbleached Cake Flour Unbleached Cake Flour 120g 1 cup
- Unbleached Wheat Flour Unbleached Wheat Flour 120g 1 cup
- Brown Sugar Brown Sugar 100g 1/2 cup
- Baking Powder Baking Powder 1 tbsp 1 tbsp
- Ground Cinnamon Ground Cinnamon 1/2 tsp 1/2 tsp
- Ground Nutmeg Ground Nutmeg 1/4 tsp 1/4 tsp
- Table Salt Table Salt 1/4 tsp 1/4 tsp
- Zucchini Courgette 3 3
- Apple Sauce Apple Sauce 125g 1/2 cup
- Plain Medium Fat Yoghurt Plain Medium Fat Yoghurt 125g 1/2 cup
- Olive Oil Olive Oil 60ml 1/4 cup
- Vanilla Extract Vanilla Extract 1 tsp 1 tsp
Instructions
- 1.Preheat oven to 180c and grease a loaf pan.
- 2.Grate zucchini (skin intact) and place it on paper towels to absorb most of the moisture.
- 3.Add dry ingredients to a large mixing bowl and whisk to combine.
- 4.Add zucchini (courgette), apple sauce, yoghurt, olive oil and vanilla extract to a medium mixing bowl and stir to combine.
- 5.Add wet ingredients to dry ingredients and fold until combined.
- 6.Transfer batter to loaf pan, bake for 55min, or until tester inserted in centre comes out clean.
- 7.Remove from oven and allow to cool on a cooling rack for 15min.
- 8.Remove bread from pan by gently knocking on the bottom and sides of pan, allow to cool completely and enjoy!
