- Olive Oil Olive Oil 60ml 1/4 cup
- Apple Cider Vinegar Apple Cider Vinegar 60ml 1/4 cup
- Dijon Mustard Dijon Mustard 1 tbsp 1 tbsp
- Sea Salt Sea Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
- Granny Smith Apple Granny Smith Apple 1 1
- Kale Kale 210g 3 cups
- Feta Cheese Feta Cheese 40g 1/4 cup
- Cranberries Cranberries 2 tbsp 2 tbsp
- Almonds Almonds 1 tbsp 1 tbsp
Instructions
- 1.Combine olive oil, apple cider vinegar, dijon mustard, sea salt and black pepper in a blender and blend until smooth.
- 2.Pour the dressing into a glass jar with a lid.
- 3.Add salad ingredients in layers, starting with the apples, then add feta, sliced cranberries, washed kale and almond shavings.
- 4.Refrigerate for up to three days, or shake jar and enjoy immediately.
