- Banana Banana 3 3
- All Purpose Flour Plain Flour 200g 1 & 2/3 cups
- Wheat Flour Wheat Flour 50g 3 tbsp
- Caster Sugar Caster Sugar 100g 1/2 cup
- Vegetable Oil Vegetable Oil 90ml 6 tbsp
- Baking Powder Baking Powder 2 tsp 2 tsp
- Table Salt Table Salt 1/4 tsp 1/4 tsp
- Vanilla Extract Vanilla Extract 1 tsp 1 tsp
- Walnuts Walnuts 60g 1/2 cup
- Dried Cranberries Dried Cranberries 20g 1/6 cup
Instructions
- 1.For best results, use very ripe bananas.
- 2.Preheat the oven to 180C degrees.
- 3.Grease a 2lb bread loaf baking tin with vegetable oil, line with parchment baking paper.
- 4.Peel the bananas and finely crush them with a fork or blend them with a hand blender in a large mixing bowl.
- 5.Mix in vegetable oil and vanilla extract, stir until all is well mixed.
- 6.Sift the flour, sugar, salt and baking powder, add all to the moist mixture. Then stir in 3/4 of the cranberries and walnuts.
- 7.Pour the mixture into the bread loaf baking tin, top it with the rest of the cranberries and chopped walnuts.
- 8.Cover the cake with tin foil, bake for 20 minutes, remove the foil and bake for another 15 minutes until a toothpick comes out clean.
- 9.Cool for 25-30 minutes before serving.
