- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Garlic Garlic 2 cloves 2 cloves
- Red Chilies Red Chillies 2 2
- Ginger Root Ginger Root 1 tsp 1 tsp
- Ground Cumin Ground Cumin 1 tsp 1 tsp
- Mustard Seeds Mustard Seeds 1 tsp 1 tsp
- Cinnamon Sticks Cinnamon Sticks 1 1
- Ground Turmeric Ground Turmeric 1/2 tsp 1/2 tsp
- White Potatoes White Potatoes 4 4
- Water Water 125ml 1/2 cup
- Fresh Spinach Fresh Spinach 300g 10 cups
Instructions
- 1.Peel and mince garlic and ginger, mince chillies, dice onion, peel potatoes and cut into bite size pieces.
- 2.Heat olive oil in a pan over medium heat.
- 3.Add onion and cook until soft and translucent.
- 4. Add cumin, mustard seeds and cinnamon and stir until mustard seeds start to pop.
- 5.Add turmeric and stir to combine.
- 6.Add potatoes, garlic, chilli and ginger and stir to combine.
- 7.Add water, cover and cook for 15min or until potatoes are soft, stirring occassionally.
- 8.Add spinach and cook until water has evaporated and spinach is wilted.
- 9.Serve immediately as is or with flatbread/rice.
