This simple and quick recipe of well-cooked asparagus with a dressing of olive oil, garlic and lemon makes for a great vegan appetizer or side dish! It‘s healthy, low carb and yet extremely rewarding!

- Asparagus Asparagus 200g 1 & 2/3 cups
- Lemon Lemon 1/2 1/2
- Garlic Garlic 3 cloves 3 cloves
- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Table Salt Table Salt 1/4 tsp 1/4 tsp
- Ground Black Pepper Ground Black Pepper pinch pinch
Instructions
- 1.Preheat the oven to 180C.
- 2.In a large bowl, toss the asparagus with all the other ingredients.
- 3.Transfer the asparagus spears onto a baking dish, spread them evenly and place the lemon slices and crushed garlic on top.
- 4.Bake for 10 minutes until the edges of the asparagus spears have turned slightly golden and crispy.
- 5.Remove from the oven and serve warm.
