This gorgeously soft and fluffy spelt and vanilla sponge cake is a breeze to make, dairy free and requires just 6 ingredients to prepare. Light and moreish, it's a fantastic option for your meal planner.

- Spelt Flour Spelt Flour 300g 2 & 1/2 cups
- Baking Powder Baking Powder 3 tsp 3 tsp
- Granulated Sugar Granulated Sugar 180g 7/8 cup
- Water Water 330ml 1 & 1/3 cups
- Vegetable Oil Vegetable Oil 90ml 6 tbsp
- Bourbon Vanilla Powder Bourbon Vanilla Powder 1/2 tsp 1/2 tsp
Instructions
- 1.Preheat oven to 180°C.
- 2.In a large bowl sieve flour, baking powder and the vanilla bourbon powder and mix well.
- 3.Melt the sugar in the water by stirring well then add the vegetable oil.
- 4.Pour sugar mixture into the bowl with dry ingredients and whisk gently until batter is smooth.
- 5.Line or grease a cake pan and pour the cake batter into it.
- 6.Bake for about 45 minutes or until inserted skewer comes out clean.
- 7.Allow to cool, dust top with icing/powdered sugar and serve.
