Cookie dough, salted chocolate on top – what’s not to love?! Combing almond butter, dark chocolate, chocolate chips and maple syrup, these cookie bites are choco heaven for any sweet tooth owners out there! Gluten free and dairy free, so no one misses out!

Ingredients

  • Cookie Dough Layer:
  • Almond Flour Almond Flour 300g 2 & 1/2 cups
  • Coconut Flour Coconut Flour 5 tbsp 5 tbsp
  • Maple Syrup Maple Syrup 120g 1 cup
  • Coconut Oil Coconut Oil 3 tbsp 3 tbsp
  • Almond Butter Almond Butter 3 heaped tbsp 3 heaped tbsp
  • Dark Chocolate Dark Chocolate 50g 2/5 cup
  • Chocolate Layer:
  • Dark Chocolate Chips Dark Chocolate Chips 100g 3/5 cup
  • Almond Butter Almond Butter 2 tbsp 2 tbsp
  • Coconut Oil Coconut Oil 2 tbsp 2 tbsp
  • Maple Syrup Maple Syrup 2 and 1/2 tbsp 2 & 1/2 tbsp
  • Sea Salt Sea Salt topping topping

Instructions

  1. 1.In a medium bowl mix together dry ingredients for the cookie dough base, chop dark chocolate (i use 60-70% cocoa) roughly into pieces and set both aside.
  2. 2.In a jar or small bowl mix together wet ingredients, then pour the into the dry ingredient bowl. Mix with a spoon or with hands until it becomes a dough.
  3. 3.Now fold in chocolate pieces.
  4. 4.Line a pan with parchment paper and press dough firmly into a baking dish, flatten with your hand. Place in the freezer to chill for 20 minutes.
  5. 5.Meanwhile, make the chocolate layer. Melt your chocolate, nut butter, coconut oil and maple syrup and stir until smooth.
  6. 6.Pour your chocolate topping over your cookie dough, sprinkle sea salt on top and place in the fridge to set, 1 hour.
  7. 7.Cut into squares and enjoy.
