- Gnocchi Gnocchi 240g 2 cups
- Water Water 750ml 3 cups
- Yellow Onion Brown Onion 1 1
- Garlic Garlic 1 clove 1 clove
- Olive Oil Olive Oil 2 tbsp 2 tbsp
- Wild Mushrooms Wild Mushrooms 200g 2 & 2/3 cups
- Table Salt Table Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
- Mixed Italian Herbs Mixed Italian Herbs 1/2 tsp 1/2 tsp
- Vegan Parmesan Vegan Parmesan 1/2 tsp 1/2 tsp
Instructions
- 1.Chop the onions and the garlic.
- 2.Clean the wild mushrooms with a small knife (do not wash them because they’ll lose their taste!) and halve or quarter them, depending on size.
- 3.Heat a saucepan with the oil, add onion and garlic and roast golden, then add mushrooms and fry them on low heat. Season with salt, pepper and Italian dried herbs.
- 4.Heat water in a pot, salt it and drop gnocchi into boiling water, cook until they rise to the top (2-3 minutes).
- 5.Drain gnocchi and add them to the mushrooms.
- 6.Mix well and fry everything on low heat for about 1 minute.
- 7.Serve with vegan parmesan and a salad of your choice.
