This refreshing and sweet apple and kale salad with tangy mustard dressing is both rich in flavor and protein. A wonderful light and vegetarian lunch that's well worth a spot in your weekly meal plan.

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Olive Oil Olive Oil 60ml 1/4 cup
  • Apple Cider Vinegar Apple Cider Vinegar 60ml 1/4 cup
  • Dijon Mustard Dijon Mustard 1 tbsp 1 tbsp
  • Sea Salt Sea Salt pinch pinch
  • Ground Black Pepper Ground Black Pepper pinch pinch
  • Granny Smith Apple Granny Smith Apple 1 1
  • Kale Kale 210g 3 cups
  • Feta Cheese Feta Cheese 40g 1/4 cup
  • Cranberries Cranberries 2 tbsp 2 tbsp
  • Almonds Almonds 1 tbsp 1 tbsp

Instructions

  1. 1.Combine olive oil, apple cider vinegar, dijon mustard, sea salt and black pepper in a blender and blend until smooth.
  2. 2.Pour the dressing into a glass jar with a lid.
  3. 3.Add salad ingredients in layers, starting with the apples, then add feta, sliced cranberries, washed kale and almond shavings.
  4. 4.Refrigerate for up to three days, or shake jar and enjoy immediately.
