Apricot and Pumpkin Energy Bites

Packed with energy, vitamin C goodness and high in protein - these raw fruity bites are so easy and fun to make! Just 4 ingredients are required and no baking is necessary - simply prepare, refrigerate and cookie cut! A great fruity vegan appetizer or snack to go in your meal plan!

Gluten Free Dairy Free High Protein

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Dried Apricots Dried Apricots 190g 1 cup
  • Pitted Dates Pitted Dates 140g 3/4 cup
  • Pumpkin Seeds Pumpkin Seeds 130g 1 cup
  • Chia Seeds Chia Seeds 2 tbsp 2 tbsp

Instructions

  1. 1.Place apricots and dates in a blender and pulse until it forms a large mass.
  2. 2.Add pumpkin seeds and pulse until just combined.
  3. 3.Remove mixutre and add to a big mixing bowl.
  4. 4.Add chia seeds and mix together by hand.
  5. 5.Flatted mixture with a rolling pin, cover with wax paper and refrigerate for at least an hour.
  6. 6.Cut into squares or into shapes with a cookie cutter.
