Avocado Bread with Coconut Glaze

A sweet and moist homemade bread infused with avocado and served with a fingerlicking coconut oil glaze.

- All Purpose Flour Plain Flour 130g 1 cup
- Baking Powder Baking Powder 1/2 tsp 1/2 tsp
- Baking Soda Bicarbonate of Soda 1/2 tsp 1/2 tsp
- Ground Cinnamon Ground Cinnamon 1/4 tsp 1/4 tsp
- Ground Nutmeg Ground Nutmeg 1/8 tsp 1/8 tsp
- Table Salt Table Salt pinch pinch
- Coconut Oil Coconut Oil 60ml 1/4 cup
- Brown Sugar Brown Sugar 100g 1/2 cup
- Avocado Avocado 1 1
- Vanilla Extract Vanilla Extract 1/2 tsp 1/2 tsp
- Organic Eggs Organic Eggs 1 1
- Lime Juice Lime Juice 1 tbsp 1 tbsp
- Topping:
- Coconut Oil Coconut Oil 60ml 1/4 cup
- Powdered Sugar Icing Sugar 120g 1 cup
- Coconut Milk Coconut Milk 2 tbsp 2 tbsp
- Vanilla Extract Vanilla Extract 1 tsp 1 tsp
Instructions
- 1.Preheat oven to 180c and lighlty oil a loaf pan.
- 2.Whisk together dry ingredients in a large bowl.
- 3.Place coconut oil, sugar, egg and vanilla extract in a medium sized bowl and mix until combined.
- 4.Add mashed avocado and lime juice and gently fold into the flour mix until just combined.
- 5.Spoon mixture into loaf pan and bake for 45min or until a wooden toothpick comes out clean.
- 6.Set aside and cool completely.
- 7.Cream softened coconut oil until smooth, add 1/4 cup powdered sugar, vanilla extract and 2 tbsp coconut milk and mix together until smooth. Adjust as necessary by adding more powdered sugar and/or milk as needed until well combined. Pour glaze over cooled cake and set aside for 10min.
- 8.Slice and enjoy!
