Baked Onion and Goats Cheese Salad

A rich and flavorful arugula (rocket) salad with roasted onions, goats cheese and feta. Served with a delicious honey and mustard dressing.

- Arugula Salad Rocket Salad 100g 5 cups
- Red Onion Red Onion 2 2
- Goats Cheese Goats Cheese 75g 1/2 cup
- Walnuts Walnuts 40g 1/3 cup
- Clear Honey Clear Honey 2 tbsp 2 tbsp
- Wholegrain Mustard Wholegrain Mustard 1 tsp 1 tsp
- Balsamic Vinegar Balsamic Vinegar 3 tsp 3 tsp
- Extra Virgin Olive Oil Extra Virgin Olive Oil 2 tbsp 2 tbsp
- Table Salt Table Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
Instructions
- 1.Slice red onion into rings and bake for 10-12 min at 180c.
- 2.Add rocket salad (arugula) to a bowl.
- 3.Chop walnuts and goats cheese into 1cm pieces and add to the salad bowl.
- 4.Combine two tsp honey and 1 tsp mustard and slowly add the balsamic vinegar while stirring, then add 2 tbsp olive oil and a pinch of salt.
- 5.Place warm red onion rings on top of the rocket salad.
- 6.Add dressing and season to taste.
