- Extra Virgin Olive Oil Extra Virgin Olive Oil 4 tbsp 4 tbsp

- Linguine Pasta Linguine Pasta 150g 3/5 cup
Instructions
- 1.Place garlic and 2 tbsp olive oil in a saucepan over medium heat.
- 2.Deseed and dice bell pepper, add to saucepan and cook for 3min.
- 3.Add 1/4 cup water and increase heat to high for 5min until the bell pepper softens.
- 4.Transfer to a food processor and blend until smooth, set aside.
- 5.In another pot cook finely sliced shallots with 2 tbsp olive oil, add tomatoe puree and cook for 20min on medium heat.
- 6.Meanwhile cook pasta according to packet instructions.
- 7.Gently combine pasta and sauce and season with salt and pepper to taste. Top with vegan parmesan cheese (optional).
