Our chewy and heavenly sweet baked bites with a dark chocolate finish are super easy to bake and will go down a storm with your family or guests! Creamy cashew butter infused with dark chocolate and aquafaba, these gorgeous blondies are gluten free too!

- Cashew Butter Cashew Butter 150g 3/5 cup
- Pure Cane Sugar Pure Cane Sugar 80g 2/5 cup
- Aquafaba Aquafaba 5 tbsp 5 tbsp
- Coconut Oil Coconut Oil 3 tbsp 3 tbsp
- Almond Meal Almond Meal 200g 1 & 2/3 cups
- Baking Powder Baking Powder 1 tsp 1 tsp
- Dark Chocolate Dark Chocolate 80g 2/3 cup
Instructions
- 1.Preheat oven to 180C.
- 2.Line loaf pan with parchment paper.
- 3.In a large bowl mix aquafaba until foamy for 2-3 minutes and set aside.
- 4.Add baking powder and almond meal to another bowl and mix well.
- 5.Blend melted coconut oil and cashew butter until smooth and transfer the mixture to the foamy aquafaba. Mix with a spoon until well combined.
- 6.Add dry ingredients to wet ingredients until sticky dough forms.|Transfer the dough to the baking dish and spread evenly.
- 7.Bake for 25 minutes and let cool down completely.
- 8.Melt chocolate and spread on top of blondies with the back of a spoon.
- 9.Place in the fridge for 30 min and enjoy.
