Cashew Butter Blondies

Our chewy and heavenly sweet baked bites with a dark chocolate finish are super easy to bake and will go down a storm with your family or guests! Creamy cashew butter infused with dark chocolate and aquafaba, these gorgeous blondies are gluten free too!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Cashew Butter Cashew Butter 150g 3/5 cup
  • Pure Cane Sugar Pure Cane Sugar 80g 2/5 cup
  • Aquafaba Aquafaba 5 tbsp 5 tbsp
  • Coconut Oil Coconut Oil 3 tbsp 3 tbsp
  • Almond Meal Almond Meal 200g 1 & 2/3 cups
  • Baking Powder Baking Powder 1 tsp 1 tsp
  • Dark Chocolate Dark Chocolate 80g 2/3 cup

Instructions

  1. 1.Preheat oven to 180C.
  2. 2.Line loaf pan with parchment paper.
  3. 3.In a large bowl mix aquafaba until foamy for 2-3 minutes and set aside.
  4. 4.Add baking powder and almond meal to another bowl and mix well.
  5. 5.Blend melted coconut oil and cashew butter until smooth and transfer the mixture to the foamy aquafaba. Mix with a spoon until well combined.
  6. 6.Add dry ingredients to wet ingredients until sticky dough forms.|Transfer the dough to the baking dish and spread evenly.
  7. 7.Bake for 25 minutes and let cool down completely.
  8. 8.Melt chocolate and spread on top of blondies with the back of a spoon.
  9. 9.Place in the fridge for 30 min and enjoy.
