Chocolate Chip Vegan Muffins

Fluffy, sweet and rich, these vegan chocolate chip muffins are extremely hard to resist! Quick and easy to whip up, they make for a perfect breakfast or sweet snack to add to your meal plan!

Ingredients

* Switch between cup/oz and g/ml in Account Settings*

  • Wheat Flour Wheat Flour 250g 2 cups
  • Granulated Sugar Granulated Sugar 180g 1 & 7/8 cups
  • Oat Milk Oat Milk 150ml 3/5 cup
  • Corn Oil Corn Oil 60ml 1/4 cup
  • Dark Chocolate Flakes Dark Chocolate Flakes 100g 1/2 cup
  • Baking Powder Baking Powder 1 tsp 1 tsp
  • Vanilla Extract Vanilla Extract tsp tsp
  • Orange Orange 1 1

Instructions

  1. 1.First, sieve all the dry ingredients and mix them together in a big bowl.
  2. 2.Slowly pour the wet ingredients together with freshly squeezed orange juice, orange zest and the chocolate flakes.
  3. 3.Continue to whip the batter then evenly distribute it among the muffin tin cups and placed in the oven.
  4. 4.Bake at 180° for about 20 minutes and good luck struggling to wait for them to cool down before enjoying.
