Citrus Poppy Seed Loaf

A sweet and fluffy poppy seed loaf. Deliciously infused with lemon, orange and vanilla.
Ingredients

- Wheat Flour Wheat Flour 180g 1 & 1/2 cups
- Baking Powder Baking Powder 2 tsp 2 tsp
- Sea Salt Sea Salt 1/2 tsp 1/2 tsp
- Granulated Sugar Granulated Sugar 200g 1 cup
- Orange Orange 1 1
- Grapefruit Grapefruit 1 1
- Lemon Lemon 1 1
- Lime Lime 2 2
- Organic Eggs Organic Eggs 2 2
- Olive Oil Olive Oil 80ml 1/3 cup
- Vanilla Extract Vanilla Extract 1 tsp 1 tsp
- Greek Yoghurt Greek Yoghurt 250g 1 cup
- Poppy Seeds Poppy Seeds 1 tbsp 1 tbsp
- Powdered Sugar Icing Sugar 120g 1 cup
Instructions
- 1.Preheat oven to 180c and coat a loaf pan with non-stick spray.
- 2.Combine flour, baking powder and salt in a large bowl and whisk to combine.
- 3.Juice and zest citrus fruit - you will need 1 tsp zest and roughly 2 tbsps juice from each fruit.
- 4.Combine zest, sugar, eggs, oil and vanilla in a blender and blend until light and thick.
- 5.Add zest mixture to dry ingredients, followed by 3/4 cup yoghurt, 5 tbsp citrus juice and poppy seeds and stir until just combined.
- 6.Pour batter into pan and bake for 50min, or until inserted toothpick comes out clean.
- 7.While loaf is baking, whisk powdered sugar, 1 tbsp yoghurt, 1 tsp citrus juice in a medium bowl until smooth and refrigerate for 30min.,
- 8.Transfer pan to a wire rack and let it cool completely.
- 9.Drizzle glaze over cake and let it set before serving.
