- Spaghetti Pasta Spaghetti Pasta 200g 2 cups
- Cherry Tomatoes Cherry Tomatoes 300g 2 cups
- Yellow Onion Brown Onion 1 1
- Garlic Garlic 1 clove 1 clove
- Diced Tomatoes Chopped Tomatoes 250g 1 & 1/4 cups
- Table Salt Table Salt 1/4 tsp 1/4 tsp
- Ground Black Pepper Ground Black Pepper pinch pinch
- Balsamic Vinegar Balsamic Vinegar 1 tsp 1 tsp
- Olive Oil Olive Oil 1 tbsp 1 tbsp
- Fresh Basil Fresh Basil 10g 1/3 cup
- Water Water 250ml 1 cup
Instructions
- 1.Boil the spaghetti in salted water. For cooking time follow the instructions on the pasta packaging.
- 2.Rinse the spaghetti with ice-cold water and shake through a sieve to remove excess water, set aside.
- 3.Heat the oil in a large, non-stick frying pan, add the minced garlic and fry for 2-3 minutes until the garlic turns slightly golden in colour.
- 4.Add the cherry tomatoes and onion and cook for 3 minutes, stirring frequently.
- 5.Pour on 250ml hot water and then add the vinegar and tinned tomatoes.
- 6.Cover with the lid, bring to the boil and reduce heat to medium, cook for 15 mins.
- 7.Season with salt, pepper and 2/3 of the basil, stir well and cook for another 3 minutes.
- 8.Drop in the spaghetti, stir well until the sauce covers all the pasta evenly.
- 9.Remove from heat and garnish with the remaining basil to serve.
