Coconut Chia Waffles with Banana

These homemade, gluten free and protein rich waffles are a real treat! Topped with fresh bananas, honey and chia seeds, it's a gorgeous breakfast option for your meal plan!

- Oat Flour Oat Flour 180g 1 & 1/2 cups
- Baking Powder Baking Powder 2 tsp 2 tsp
- Cornstarch Cornflour 2 tsp 2 tsp
- Chia Seeds Chia Seeds 1 tbsp 1 tbsp
- Ground Cinnamon Ground Cinnamon 1/4 tsp 1/4 tsp
- Ground Nutmeg Ground Nutmeg 1/4 tsp 1/4 tsp
- Coconut Milk Light Coconut Milk Light 190ml 3/4 cup
- Raw Honey Raw Honey 2 tbsp 2 tbsp
- Coconut Oil Coconut Oil 4 tbsp 4 tbsp
- Organic Eggs Organic Eggs 2 2
- Vanilla Extract Vanilla Extract 1 tsp 1 tsp
Instructions
- 1.Whisk together dry ingredients in a large mixing bowl.
- 2.Melt and then cool the coconut oil. Crack and lightly beat the eggs. Whisk together wet ingredients in a medium sized mixing bowl.
- 3.Add wet ingredients to dry ingredients, combine and let the batter stand for 10min to thicken.
- 4.Heat waffle maker and spoon 3 tbsp into waffle maker, remove once golden brown.
- 5.Top waffles with fresh banana, honey and garnish with chia seeds (optional) and serve immediately.
