Coronation Chickpea Sandwich

A classic sandwich has had a vegan makeover here, smashed chickpeas with raisins in a curried mango chutney sauce. Wholesome and rich in protein and fiber, this chunky coronation chickpea sandwich will really hit the spot and keep you feeling energized for hours!

- Chickpeas in Water Chickpeas in Water 400g 2 cups
- Soy Yoghurt Soya Yoghurt 3 tbsp 3 tbsp
- Vegan Mayonnaise Vegan Mayonnaise 2 tbsp 2 tbsp
- Mango Chutney Mango Chutney 2 tbsp 2 tbsp
- Mild Curry Powder Mild Curry Powder 1 tsp 1 tsp
- Lemon Juice Lemon Juice 1/2 tsp 1/2 tsp
- Sultanas Sultanas 45g 1/4 cup
- Table Salt Table Salt pinch pinch
- Ground Black Pepper Ground Black Pepper pinch pinch
- Sourdough Bread Sourdough Bread 8 slices 8 slices
Instructions
- 1.Drain the can of chickpeas and mash them roughly with a potato ricer, leaving some chickpeas. It may help to heat the chickpeas up in the microwave for a minute or two to make them softer and easier to mash.
- 2.Add the yogurt, mayo, chutney, curry powder, lemon juice, and raisins. Stir this well, then season with salt and pepper.
- 3.Chill this in the fridge as it is best cold!
- 4.When the filling is properly chilled, you can assemble your sandwiches. Add some greens like spinach or kale if you like, or just have it plain!
- 5.*Note: I used sourdough bread (my favourite) but anything works!
- 6.*Note: If you don’t have vegan mayo and don’t feel like making some, more yogurt will work. But the mayo version is a little tastier, so if you can, try to find some vegan mayo!
