- Penne Pasta Penne Pasta 500g 5 cups
- Cashews Cashews 150g 1 & 1/6 cups
- Fresh Basil Fresh Basil 60g 2 & 1/2 cups
- Avocado Avocado 1/2 1/2
- Lemon Lemon 1/2 1/2
- Extra Virgin Olive Oil Extra Virgin Olive Oil 150ml 3/5 cup
- Table Salt Table Salt to taste to taste
- Ground Black Pepper Ground Black Pepper to taste to taste
Instructions
- 1.Cook penne as per instructions, meanwhile make the pesto.
- 2.Throw all ingredients for the pesto into the food processor and blend until pesto consistency appeals. You don’t want to overblend it and still want to chew on some small nut pieces.
- 3.Serve with pasta and enjoy.
- 4.Optional: Top with a cashew-based parmesan and basil leaves.
