  • Guacamole:

  • Kidney Bean Mash:
  • Kidney Beans in Water Kidney Beans in Water 400g 2 & 1/4 cups
  • Tomato Puree Tomato Puree 5 tbsp 5 tbsp
  • Tomato Paste Tomato Paste 2 tbsp 2 tbsp
  • Garlic Garlic 1 clove 1 clove
  • Yellow Onion Brown Onion 1 1
  • Olive Oil Olive Oil 1 tsp 1 tsp
  • Agave Syrup Agave Syrup 1 tsp 1 tsp
  • Tomato Salad:
  • Cherry Tomatoes Cherry Tomatoes 200g 1 & 1/3 cups
  • Red Onion Red Onion 1 1

  • Coco-Turmeric Dressing:
  • Coconut Yoghurt Coconut Yoghurt 60g 1/4 cup
  • Ground Turmeric Ground Turmeric 3/4 tsp 3/4 tsp
  • Soy Milk Soya Milk 50ml 1/5 cup
  • Garlic Garlic 1 clove 1 clove
  • Olive Oil Olive Oil 1 tsp 1 tsp
  • Table Salt Table Salt 1/4 tsp 1/4 tsp
  • Other:
  • Arugula Salad Rocket Salad 20g 1 cup
  • Sweet Potato Fries Sweet Potato Fries 160g 2 & 1/2 cups
  • White Rice White Rice 270g 1 & 1/2 cups
  • Green Chilies Green Chillies 1 1

Instructions

  1. 1.Prepare sweet potato fries and rice according to packet instructions.
  2. 2.Mash all guacamole ingedients together, season with salt and set aside.
  3. 3.Bring olive oil to a heat in a small saucepan and fry chopped onions until translucent. Then add minced garlic and all other Kidney Bean Mash ingredients. Stir through a few times and then mash the kidney beans with a fork.
  4. 4.Add Tomato Salad ingredients to a bowl and let it sit for 10min.
  5. 5.Add all Coco-Turmeric ingredients to a blender and blend until smooth.
  6. 6.Assemble bowls and serve.
